This Sulawesi semi-washed coffee expresses the character of the Enrekang highlands, in southern Sulawesi, an area long associated with the historic Kalossi coffee trade. The coffee is produced by smallholder farmers in the community of Angin Angin, located on the steep slopes surrounding Mount Latimojong, the highest mountain in Sulawesi. Farms are typically small in size and situated between approximately 1,500 and 1,800 metres above sea level, where cooler temperatures and fertile volcanic soils support slow cherry development and consistent quality. Arabica coffee has been cultivated in Enrekang since the nineteenth century, when Kalossi served as a key commercial centre for regional trade. Over time, the name “Kalossi” became widely used to describe Arabica coffees from Sulawesi’s highland areas, including neighbouring zones such as Toraja. Today, while much of the region’s production is still channelled through larger trading centres such as Toraja and Makassar, producers in Angin Angin are increasingly focused on specialty-oriented practices that bring renewed attention to Enrekang as a distinct origin. This lot is composed primarily of traditional Arabica varieties and is processed using a semi-washed method. After harvest, cherries are pulped and lightly fermented before drying, allowing the coffee to preserve clarity and structure while retaining the depth and texture traditionally associated with Sulawesi profiles.
