In the western highlands of El Salvador, the municipality of Chalchuapa in Santa Ana offers ideal conditions for coffee cultivation, with elevations ranging from 1,100 to 1,630 meters above sea level. This altitude allows the coffee cherries to mature slowly, giving the beans more time to absorb nutrients and develop refined flavors. The top grade for Salvadoran coffee, known as Strictly High-Grown (SHG), starts at 1,200 meters, while coffees between 900 and 1,200 meters are considered High Grown. Beans grown below 900 meters fall into the Central Standard category. Nestled near the Guatemalan border, Chalchuapa is known for its volcanic soils and rich pre-Columbian history, both of which add cultural and agricultural depth to the coffee grown there. The combination of fertile land, skilled small producers, and favorable climate conditions gives coffees from this region a distinct and expressive profile.
