Colombia Supremo Popayán SC17/18 is a regional coffee from the department of Cauca, sourced from smallholders located on the Popayán plateau at 1,600–1,700 m.a.s.l. on volcanic soils. Production is concentrated in more than 35 municipalities — including Popayán, Cajibío, Piendamó and Balboa — where coffee-growing families carry out selective handpicking and use fully washed processing. This coffee is carefully sourced and milled by A. Laumayer y Compañía from several smallholder farms (fincas). Coffee farming is carried out mainly on family-run farms of less than 5 hectares, many of them belonging to indigenous communities and small producers who manage the crop intensively and by hand. Ripe cherries are harvested manually, then depulped and wet-fermented on the farm, followed by drying on patios or in parabolic dryers before the dry parchment is delivered for final classification and preparation. The lot is composed mainly of Caturra, Castillo and Colombia varieties, fully washed and graded as Supremo SC17/18, ensuring a clean and uniform preparation. In the cup, it offers medium to bright acidity, medium body and a classic Popayán profile with notes of caramel, milk chocolate and hints of red fruit.
