This coffee is sourced and prepared by Café Colsuaves S.A.S., an established Colombian coffee exporter founded in 1993 and based in Pereira, working with a network of smallholder farms and regional mills across the Popayán plateau. As most coffee in the region is produced on small family-run farms, Colsuaves sources its coffees from local mills and producer groups. Ripe cherries are typically pulped, washed and sun-dried at the farm level before being pooled into larger lots for final classification and preparation. Grown at 1,600 to 1,700 meters above sea level in the department of Cauca, this regional coffee develops on volcanic soils that contribute to its balanced structure and clarity in the cup. Production is concentrated across more than 35 municipalities—including Popayán, Cajibío, Piendamó and Balboa—where coffee-growing families carry out selective handpicking and fully washed processing. The lot is composed primarily of Caturra, Castillo and Colombia varieties. Graded as Supremo SC17/18, it consists of large, uniform beans with minimal defects, reflecting a high standard of preparation and sorting. In the cup, it offers medium to bright acidity, medium body and a classic Popayán profile with notes of caramel, milk chocolate and hints of red fruit.
