This Swiss Water® decaffeinated coffee is sourced from the Cooperativa Cafetalera Capucas Limitada (COCAFCAL), widely known as Las Capucas, in western Honduras near Celaque National Park. Founded in 1999, the cooperative brings together several coffee-growing communities in a region where coffee cultivation dates back to the late nineteenth century. The coffee is primarily Caturra, grown between 1,400 and 1,600 meters above sea level in fertile, mountainous terrain. In addition to the Bird Friendly® certification, Las Capucas also holds Organic, Fairtrade and Rainforest Alliance certifications. Operating as a cooperative enables COCAFCAL to strengthen local livelihoods through financial, technical and marketing support, while investing in community projects and environmental education. Decaffeinated using the Swiss Water® Process, caffeine is gently removed with pure water and carbon filtration, preserving aroma, structure and organic integrity. The result is a clean and expressive cup with notes of cocoa and stone fruit, supported by a sustainability story deeply rooted in one of Honduras’ most vibrant coffee-growing regions. The Smithsonian Bird Friendly® certification promotes coffee farming systems that protect biodiversity, native forests and migratory bird habitats. All Bird Friendly® coffees are both organic and shade-grown, helping preserve ecosystems, store carbon and support wildlife. Farms maintain tall and diverse native canopies that naturally regulate temperature and slow cherry development, contributing to greater sweetness and complexity in the cup. While conventional coffee production continues to put pressure on forested areas in many origins, Bird Friendly® producers represent a model in which environmental protection and quality progress together.
